  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
  3. In another bowl, mix the melted butter, sour cream, and eggs until smooth. Stir in the shredded zucchini.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the shredded cheddar cheese, chives, parsley, and garlic powder.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes
