Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Mix the wet ingredients: In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Add the zucchini: Fold in the grated zucchini until evenly distributed. If using, stir in the chopped nuts and chocolate chips.
- Bake the bread: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Use fresh zucchini for the best flavor and texture. Do not overmix the batter to avoid a dense loaf. Customize with nuts, chocolate chips, or dried fruit. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
