  • 1 lb andouille sausage, sliced into rounds
  • 1 ½ cups long-grain white rice
  • 3 cups chicken broth
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced andouille sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced onion, bell peppers, and celery. Cook until the vegetables begin to soften, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the rice, Cajun seasoning, smoked paprika, dried thyme, and cayenne pepper. Cook for 2-3 minutes, stirring constantly, to toast the rice and spices.
  4. Return the browned sausage to the skillet. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Remove from heat and let stand covered for 5 minutes. Fluff the rice with a fork, season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

Long-grain white rice works best as it holds its shape well. Adjust cayenne pepper to control heat level. The dish reheats beautifully and makes excellent leftovers.
