  • 1 red bell pepper, diced

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish
  • Salt and black pepper to taste

Method
 

Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. In the same skillet, add diced onions and bell peppers. Cook until softened, about 5 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in rice, Cajun seasoning, smoked paprika, thyme, and cayenne pepper. Cook for 2 minutes, stirring constantly to toast the rice and spices.
  4. Pour in chicken broth and diced tomatoes with their juices. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  5. Return the cooked sausage to the skillet. Stir everything together and cook for another 2-3 minutes to heat through. Season with salt and black pepper to taste.
  6. Garnish with fresh parsley and serve hot directly from the skillet.

Notes

Use a well-seasoned cast iron skillet for even heat distribution. For creamier texture, add a splash of cream during last few minutes. Pairs well with green salad or crusty bread.
