  • 8 slices of soft white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz (225g) cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading)

  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined. Adjust seasoning to taste.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. For extra crispness, pat the slices dry with a paper towel to remove excess moisture.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter one side of each slice to add a layer of flavor and prevent sogginess. Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of each slice.
  4. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  5. Using a sharp knife, carefully trim the crusts off the sandwiches for a clean, elegant look. Cut each sandwich into quarters or smaller rectangles for tea-time finger sandwiches. Serve immediately or cover with a damp cloth to keep fresh until serving.

Notes

Choose soft, fresh bread for a delicate texture. To prevent sogginess, assemble sandwiches just before serving or store components separately. For extra flavor, consider adding hummus or smoked paprika to the cream cheese mixture.
