- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
- In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Stir until the peaches are evenly coated. Pour the peach mixture into the prepared baking dish.
- In another bowl, mix the flour, rolled oats, salt, and cold cubed butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the oat mixture evenly over the peaches.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
- Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use ripe but firm peaches for the best texture. For a crispier topping, add 1/2 cup of chopped nuts like pecans or almonds to the oat mixture. You can prepare the peach filling ahead of time and store it in the refrigerator. Store leftovers in the refrigerator for up to 3 days.
