  • 3 cloves garlic, minced
  • 1 cup heavy cream

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 lemon, juiced
  • Salt and black pepper to taste

  1. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 4-5 minutes per side until cooked through. Remove from skillet and flake into large chunks.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until smooth and creamy.
  5. Add the cooked pasta to the cream sauce along with the reserved pasta water. Stir to combine thoroughly.
  6. Fold in the flaked salmon and mixed greens. Cook for 1-2 minutes until greens are wilted.
  7. Squeeze fresh lemon juice over the pasta, garnish with parsley, and serve immediately.

Notes

Use fresh salmon fillets for best texture and flavor. Don't overcook the salmon - it should flake easily but remain moist. The mixed greens can be customized with spinach, arugula, or kale based on preference.
