- Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- While pasta cooks, season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 4-5 minutes per side until cooked through. Remove from skillet and flake into large chunks.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until smooth and creamy.
- Add the cooked pasta to the cream sauce along with the reserved pasta water. Stir to combine thoroughly.
- Fold in the flaked salmon and mixed greens. Cook for 1-2 minutes until greens are wilted.
- Squeeze fresh lemon juice over the pasta, garnish with parsley, and serve immediately.
Notes
Use fresh salmon fillets for best texture and flavor. Don't overcook the salmon - it should flake easily but remain moist. The mixed greens can be customized with spinach, arugula, or kale based on preference.
