- Place chicken breasts between two pieces of plastic wrap and pound gently to ½-inch thickness using a meat mallet or rolling pin
- Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese, garlic powder, and paprika
- Dredge each chicken breast in flour, shaking off excess. Dip in beaten eggs, then coat thoroughly with the panko mixture, pressing gently to adhere
- Heat about ¼ inch of vegetable oil in a large skillet over medium heat. Fry chicken for 4-5 minutes per side until golden brown and cooked through, or bake at 400°F for 20-25 minutes on a wire rack over a baking sheet
- Top each cooked chicken breast with a slice of smoked turkey and Swiss cheese. Return to the oven or cover the skillet until cheese melts
- While chicken rests, whisk together all honey mustard sauce ingredients until smooth
