- Prepare the Chicken - Place flour in one shallow bowl. Beat eggs in another bowl. In a third bowl, combine Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Coat the Chicken - Dredge each chicken breast first in flour, shaking off excess. Dip in beaten eggs, then coat thoroughly with the Parmesan mixture, pressing gently to help it adhere.
- Cook the Chicken - Heat 2 tablespoons of oil in a large skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature 165°F). Transfer to a plate and keep warm.
- Make the Garlic Sauce - In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth, then add heavy cream and Parmesan cheese. Simmer for 3-4 minutes until slightly thickened. Season with salt and pepper.
- Serve - Pour the creamy garlic sauce over the crispy Parmesan chicken. Garnish with fresh parsley and serve immediately.
Notes
Pound chicken to even thickness for perfect cooking. Cook in batches to avoid overcrowding pan. Can prepare breaded chicken up to a day in advance. Chicken thighs can be substituted - adjust cooking time accordingly.
