- Prepare the garlic butter sauce by combining melted butter, minced garlic, Italian seasoning, paprika, onion powder, black pepper, and salt in a small bowl. Mix well until all ingredients are fully incorporated.
- Place the halved baby potatoes and carrot pieces in the bottom of your crock pot. Pour half of the garlic butter sauce over the vegetables and toss to coat evenly.
- Arrange the chicken breasts on top of the vegetables in a single layer. Pour the remaining garlic butter sauce over the chicken, making sure each piece is well coated.
- Pour the chicken broth around the edges of the crock pot (not directly over the chicken to avoid washing off the seasoning).
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
- Before serving, garnish with fresh chopped parsley. For extra richness, you can spoon some of the cooking liquid over each serving.
Notes
For perfect chicken texture, avoid overcooking - check for doneness at minimum cooking time (165°F internal temp). For thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in during last 30 minutes of cooking.
