  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1.5 pounds baby potatoes, halved
  • 4 large carrots, peeled and cut into 1-inch pieces
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Method
 

Instructions
  1. Prepare the garlic butter sauce by combining melted butter, minced garlic, Italian seasoning, paprika, onion powder, black pepper, and salt in a small bowl. Mix well until all ingredients are fully incorporated.
  2. Place the halved baby potatoes and carrot pieces in the bottom of your crock pot. Pour half of the garlic butter sauce over the vegetables and toss to coat evenly.
  3. Arrange the chicken breasts on top of the vegetables in a single layer. Pour the remaining garlic butter sauce over the chicken, making sure each piece is well coated.
  4. Pour the chicken broth around the edges of the crock pot (not directly over the chicken to avoid washing off the seasoning).
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  6. Before serving, garnish with fresh chopped parsley. For extra richness, you can spoon some of the cooking liquid over each serving.

Notes

For perfect chicken texture, avoid overcooking - check for doneness at minimum cooking time (165°F internal temp). For thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in during last 30 minutes of cooking.
