  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/4 cup grated Parmesan cheese

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet on a lightly floured surface to fit your baking sheet. Transfer the pastry to the prepared baking sheet.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, thyme, rosemary, salt, and pepper to make the glaze.
  4. Arrange the tomato slices on the puff pastry, leaving a small border around the edges. Brush the tomatoes generously with the glaze. If using mozzarella cheese, sprinkle it over the tomatoes. Fold the edges of the pastry inward to create a rustic crust.
  5. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are tender. Sprinkle grated Parmesan cheese on top during the last 5 minutes of baking.
  6. Allow the tart to cool slightly before slicing. Serve warm or at room temperature, garnished with additional fresh herbs if desired.

Choose ripe tomatoes for the best flavor. Drain excess moisture from tomato slices to prevent a soggy crust. Customize the cheese or add fresh herbs for extra flavor.
