  1. Prepare the vegetables and fruit. Wash the strawberries and cucumber thoroughly. Hull the strawberries and slice them into quarters. Thinly slice the cucumber using a sharp knife or mandoline.
  2. Combine the base ingredients. In a large mixing bowl, combine the sliced strawberries, cucumber, and crumbled feta cheese. Gently toss to mix without crushing the berries.
  3. Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined. The honey helps balance the acidity of the lemon juice.
  4. Dress the salad. Pour the dressing over the strawberry and cucumber mixture. Add the chopped mint leaves and gently toss everything together until evenly coated.
