- Preheat the oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with butter.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
- Combine wet ingredients: In another bowl, mix the melted butter, buttermilk, lemon juice, eggs, and vanilla extract until smooth and well combined.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula. Be careful not to overmix; a few lumps are okay.
- Add blueberries: Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
- Fill muffin cups: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Use fresh blueberries for best results. Do not overmix the batter to avoid dense muffins. For an extra touch, add a streusel topping before baking.
