  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Fresh basil leaves for garnish (optional)

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet.
  3. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the puff pastry, leaving a 1-inch border around the edges.
  4. Place the thinly sliced tomatoes on top of the cheese, overlapping slightly. Drizzle with olive oil and sprinkle with dried oregano, dried basil, salt, and pepper.
  5. Gently fold the edges of the puff pastry inward to create a rustic border, pressing lightly to seal.
  6. Brush the beaten egg over the folded edges of the pastry for a golden finish.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the cheese is bubbly.
  8. Remove from the oven and let it cool slightly. Garnish with fresh basil leaves if desired. Slice and serve warm.

Notes

Use firm, ripe tomatoes for the best flavor and texture. Drain the tomato slices to prevent a soggy crust. Experiment with different cheeses like goat cheese or feta for a unique twist.
