- Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
- Thinly slice the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened. Add the zucchini slices and cook for 3-4 minutes until slightly tender. Stir in the cherry tomatoes and cook for another 2 minutes.
- In a large bowl, mix the sautéed vegetables with the beaten eggs, shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, oregano, basil, salt, and pepper. Stir until well combined.
- Transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle additional breadcrumbs and Parmesan cheese on top for a crispy crust.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is set.
- Let the casserole cool for a few minutes before slicing and serving. Enjoy it warm as a side dish or a light main course.
Notes
For the best flavor, use freshly picked zucchini and tomatoes. For extra texture, mix breadcrumbs with a little melted butter before sprinkling on top. This casserole can be assembled ahead of time and refrigerated until ready to bake.
