- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or non-stick spray.
- Wash and thinly slice the zucchinis. Place the slices in a colander and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
- In a bowl, combine the shredded cheddar cheese, mozzarella cheese, grated Parmesan cheese, breadcrumbs, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well.
- Arrange a layer of zucchini slices in the prepared baking dish. Spread a portion of the cheese mixture evenly over the zucchini. Repeat the layers until all the zucchini and cheese mixture are used, ending with a layer of cheese on top.
- Drizzle the sour cream over the top layer of cheese. Sprinkle the chopped fresh parsley evenly over the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly. Let it cool for a few minutes before serving.
Notes
Use fresh zucchini for the best texture and flavor. For extra crunch, mix breadcrumbs with melted butter and sprinkle over the top before baking. You can assemble the casserole ahead of time and refrigerate it until ready to bake.
