  1. Prepare the vegetables by finely shredding the cabbage using a mandoline or sharp knife, julienning the carrots, and thinly slicing the red onion and bell pepper. Combine all vegetables in a large mixing bowl.
  2. Create the creamy slaw dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, and lemon juice until smooth. Add celery seeds, salt, and pepper, then taste and adjust seasoning.
  3. Pour the dressing over the vegetable mixture and toss gently but thoroughly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Just before serving, stir in the fresh parsley and give the coleslaw a final taste test, adjusting seasoning if needed.

Notes

For maximum crunch, serve within 2-3 hours. Don't overdress - start with ¾ of dressing and add more if needed. Store dressing and vegetables separately if preparing ahead and combine 30 minutes before serving.
