Instructions
- Preheat the grill: Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the peaches: Brush the peach halves with a little olive oil. Place them cut-side down on the grill and cook for 2-3 minutes, until they develop grill marks and soften slightly. Flip and grill for another 1-2 minutes. Remove from the grill and let them cool slightly.
- Prepare the balsamic glaze: In a small saucepan, combine the balsamic vinegar and honey. Simmer over low heat for 5-7 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat and let it cool.
- Assemble the salad: In a large bowl, combine the arugula and fresh basil leaves. Slice the grilled peaches and add them to the bowl. Tear the burrata cheese into pieces and scatter it over the top.
- Drizzle and serve: Drizzle the balsamic glaze over the salad and finish with a drizzle of olive oil. Season with salt and freshly ground black pepper to taste. Toss gently to combine and serve immediately.
Notes
Choose ripe peaches for the best flavor. Enhance the salad with toasted nuts like almonds or pecans for extra crunch. You can grill the peaches and prepare the balsamic glaze in advance for convenience.
