- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat and set the beef aside.
- In the same skillet, add the chopped onion and garlic. Sauté until softened, about 3-4 minutes. Add the diced potatoes and cook for another 5 minutes, stirring occasionally.
- Return the ground beef to the skillet. Stir in the frozen peas and carrots, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Mix well and let it simmer for 10-12 minutes, or until the potatoes are tender and the mixture has thickened.
- Preheat your oven to 375°F (190°C). Transfer the beef and potato mixture to a pie dish. Roll out the puff pastry and place it over the filling, trimming any excess dough. Brush the pastry with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky. Let the pie cool for a few minutes before serving.
