Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
- Gently fold the diced peaches into the batter, ensuring they are evenly distributed.
- Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
For the best flavor, use fresh, ripe peaches. If fresh peaches aren't available, you can substitute with canned peaches, but be sure to drain them well. For an extra touch, sprinkle a crumble topping made from flour, sugar, and butter over the cupcakes before baking. Store the cupcakes in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
