  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2-3 medium heirloom tomatoes, sliced
  • Fresh basil leaves for garnish
  • 1 tbsp balsamic glaze (optional)

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet and prick the center with a fork, leaving a 1-inch border around the edges.
  3. In a bowl, mix the ricotta cheese, grated Parmesan, egg, minced garlic, olive oil, salt, and pepper until smooth and well combined.
  4. Spread the ricotta mixture evenly over the puff pastry, staying within the border. Arrange the sliced heirloom tomatoes on top of the ricotta mixture, slightly overlapping them.
  5. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are slightly caramelized.
  6. Remove the tart from the oven and let it cool slightly. Garnish with fresh basil leaves and a drizzle of balsamic glaze if desired. Slice and serve warm.

Notes

Choose ripe tomatoes for the best flavor. Pat the tomato slices dry with a paper towel before placing them on the ricotta mixture to prevent a soggy crust. Sprinkle dried oregano or thyme over the tomatoes before baking for added flavor. The ricotta filling can be prepared a day ahead and stored in the refrigerator.
