- Cook the pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a gentle simmer, then reduce heat to low.
- Stir in shredded rotisserie chicken, Parmesan cheese, butter, and Italian seasoning. Cook for 5-7 minutes until the sauce thickens slightly.
- Add the cooked pasta to the skillet. Toss to coat evenly, adding a splash of reserved pasta water if the sauce is too thick. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
Notes
For an even richer sauce, add a tablespoon of cream cheese along with the heavy cream. Add sautéed mushrooms, spinach, or broccoli florets during the last few minutes of cooking for extra nutrition and flavor.
