  • 3 cups shredded rotisserie chicken
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
  1. Cook the pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and heavy cream. Bring to a gentle simmer, then reduce heat to low.
  4. Stir in shredded rotisserie chicken, Parmesan cheese, butter, and Italian seasoning. Cook for 5-7 minutes until the sauce thickens slightly.
  5. Add the cooked pasta to the skillet. Toss to coat evenly, adding a splash of reserved pasta water if the sauce is too thick. Season with salt and pepper to taste.
  6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.

Notes

For an even richer sauce, add a tablespoon of cream cheese along with the heavy cream. Add sautéed mushrooms, spinach, or broccoli florets during the last few minutes of cooking for extra nutrition and flavor.
