- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment paper.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
- Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until just combined—don't overmix.
- Carefully pour in the boiling water and stir until the batter is smooth and well blended. The batter will be thin, which creates that moist texture.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Notes
Sift cocoa powder for fudgiest texture. Don't overmix after adding wet ingredients. Use room temperature eggs for best results. Can substitute gluten-free flour for gluten-free version.
