- Preheat your oven to 375°F (190°C). Place the butter in an 8x8-inch baking dish and put it in the oven to melt while you prepare the batter.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk and vanilla extract until the batter is smooth.
- Once the butter is melted, remove the baking dish from the oven. Pour the batter evenly over the melted butter. Do not stir. Spoon the peaches and their juices over the batter, again without stirring.
- Sprinkle the cinnamon over the top of the peaches. Bake for 40-45 minutes, or until the crust is golden brown and the peaches are bubbly.
- Let the cobbler cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use fresh, ripe peaches for the best flavor. For a slightly healthier version, you can use coconut oil instead of butter. For a crispier topping, sprinkle a little brown sugar and oats over the peaches before baking. You can prepare the batter and slice the peaches ahead of time, but it's best to bake the cobbler just before serving.
