  • 2 cups fresh corn kernels (about 3 ears of corn)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1/2 cup black beans, rinsed and drained (optional)

  1. Prepare the vegetables by dicing avocados into bite-sized pieces and placing them in a large mixing bowl. Cut corn kernels off the cob, halve cherry tomatoes, finely dice red onion, chop cilantro, and mince jalapeño (if using).
  2. Make the dressing by whisking together lime juice, olive oil, honey or maple syrup, cumin, salt, and black pepper in a small bowl until well combined and slightly emulsified.
  3. Combine all ingredients by adding corn, tomatoes, red onion, cilantro, and optional black beans to the bowl with avocados. Pour dressing over and gently toss everything together without overmixing.
  4. Serve immediately by transferring to a serving bowl and garnishing with additional cilantro if desired. Best enjoyed fresh as avocados will begin to brown after about an hour.

Notes

Choose ripe but firm avocados that yield slightly to gentle pressure. For extra flavor, grill the corn before cutting off kernels. Prepare dressing and chop vegetables ahead but combine just before serving to prevent avocado browning. Salad is best enjoyed immediately but can be stored in refrigerator for up to 24 hours.
