- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a food processor, combine basil, garlic, Parmesan, pine nuts, lemon juice, salt, and pepper. Pulse until finely chopped.
- With the processor running, slowly drizzle in olive oil until a smooth pesto forms.
- Toss green beans with ¾ of the pesto mixture until evenly coated. Reserve remaining pesto for serving.
- Spread green beans in a single layer on the prepared baking sheet. Roast for 12-15 minutes, tossing halfway through, until tender with crispy edges.
- Transfer to a serving dish and drizzle with remaining pesto. Serve immediately.
Notes
Make sure green beans are completely dry before tossing with pesto for better adherence and even roasting. Don't overcrowd the baking sheet to ensure proper roasting rather than steaming.
