  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup grape juice
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 package puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the cubed beef with flour, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the diced onion, minced garlic, sliced carrots, and diced potatoes. Cook until the vegetables begin to soften, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, dried thyme, and dried rosemary. Return the beef to the pot and bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for about 1 hour, or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes.
  6. Preheat your oven to 375°F (190°C). Transfer the beef stew mixture to a large baking dish. Roll out the puff pastry and place it over the top of the dish, trimming any excess. Brush the pastry with the beaten egg to create a golden finish.
  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.

Notes

Use high-quality beef stew meat for tenderness and flavor. If the gravy is too thin, thicken it with a cornstarch slurry. Customize vegetables as desired, and consider preparing the filling a day ahead for convenience.
