- Pat the chicken pieces dry with paper towels and season with salt, pepper, paprika, onion powder, and dried thyme. Make sure each piece is evenly coated with the seasoning mixture.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the chicken pieces in a single layer. Cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Reduce heat to medium and add the remaining 2 tablespoons of butter to the same skillet. Add minced garlic and cook for 1 minute until fragrant. Be careful not to burn the garlic. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
- Return the cooked chicken to the skillet and toss to coat in the garlic butter sauce. Cook for another 2 minutes to heat through. Sprinkle with fresh parsley and serve immediately.
Notes
Don't overcrowd the skillet - cook chicken in batches if needed. Use fresh garlic for best flavor. Let chicken rest before serving for juicier results. Adjust seasoning to taste.
