Ingredients

Ingredients
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Method

Instructions
  1. Pat the chicken pieces dry with paper towels and season with salt, pepper, paprika, onion powder, and dried thyme. Make sure each piece is evenly coated with the seasoning mixture.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once the butter is melted and sizzling, add the chicken pieces in a single layer. Cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Reduce heat to medium and add the remaining 2 tablespoons of butter to the same skillet. Add minced garlic and cook for 1 minute until fragrant. Be careful not to burn the garlic. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  4. Return the cooked chicken to the skillet and toss to coat in the garlic butter sauce. Cook for another 2 minutes to heat through. Sprinkle with fresh parsley and serve immediately.

Notes

Don't overcrowd the skillet - cook chicken in batches if needed. Use fresh garlic for best flavor. Let chicken rest before serving for juicier results. Adjust seasoning to taste.
