- Preheat your oven to 375°F (190°C). In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Toss gently to coat the peaches evenly with the sugar and spices. Let the mixture sit for about 10 minutes to allow the peaches to release their juices.
- In a separate bowl, mix the flour, rolled oats, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Transfer the peach mixture to a greased 9x13-inch baking dish, spreading it out evenly. Sprinkle the cobbler topping evenly over the peaches, covering them completely.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly. If the topping begins to brown too quickly, tent the dish with aluminum foil to prevent over-browning.
- Remove the cobbler from the oven and let it cool for about 10 minutes before serving. This allows the filling to thicken slightly. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
Notes
Choose ripe but firm peaches for the best flavor. To easily peel peaches, blanch them in boiling water for 30 seconds, then transfer them to an ice bath. Adjust the sugar based on the sweetness of the peaches. The cobbler can be prepared ahead of time and stored in the refrigerator before baking. It also freezes well for up to 3 months.
