Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt, then gradually add to wet ingredients
- Stir in the oats and any optional add-ins like raisins or chocolate chips
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving 2 inches between cookies
- Bake for 10-12 minutes until edges are golden brown but centers look slightly underdone
- Let cookies cool on baking sheet for 5 minutes before transferring to wire rack
Notes
Butter temperature matters - use properly softened butter (not melted). Don't overbake - cookies continue cooking on hot baking sheet. For thicker cookies, chill dough 30 minutes before baking. Customize with different mix-ins like dried cranberries, nuts, or white chocolate chips.
