  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for wine)
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large bowl, toss the cubed beef with flour, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the diced onion, sliced carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute.
  4. Pour in the beef broth and grape juice, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme, and rosemary. Return the beef to the pot and bring the mixture to a simmer. Cover and cook for 1 hour, or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes. Remove the pot from heat and let the filling cool slightly.
  6. Preheat your oven to 375°F (190°C). Transfer the beef filling to a pie dish. Roll out the puff pastry sheet and place it over the filling, trimming any excess dough. Crimp the edges to seal and brush the top with the beaten egg for a golden finish.
  7. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbling. Let the pot pie cool for a few minutes before serving.

Notes

For extra flavor, add a splash of apple cider vinegar to the filling. If you prefer a thicker filling, mix 1 tbsp of cornstarch with 1 tbsp of water and stir it into the filling before assembling the pot pie. To make ahead, prepare the filling and refrigerate it overnight. Assemble and bake the pot pie when ready to serve.
