  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for red wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions
  1. In a large bowl, combine the cubed beef with flour, salt, black pepper, garlic powder, and onion powder. Toss until the beef is evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the coated beef and sear until browned on all sides. Remove the beef from the skillet and set it aside.
  3. In the same skillet, add the diced onion, minced garlic, sliced carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
  4. Pour in the beef broth and grape juice, scraping the bottom of the skillet to release any browned bits. Stir in the tomato paste, dried thyme, and dried rosemary. Bring the mixture to a simmer and let it cook for 5 minutes.
  5. Return the seared beef to the skillet and add the frozen peas and corn. Stir well to combine. Reduce the heat to low, cover, and let the mixture simmer for 20-25 minutes, or until the beef is tender.
  6. Preheat your oven to 375°F (190°C). Transfer the beef and vegetable mixture to a large baking dish. Roll out the puff pastry sheet and place it over the top of the dish, trimming any excess. Brush the pastry with the beaten egg to create a golden finish.
  7. Bake the pot pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and flaky. Let it cool for a few minutes before serving.

Notes

Use high-quality beef for tenderness and flavor. You can prepare the filling a day in advance and assemble the pot pie just before baking. Customize vegetables like mushrooms or green beans for variety. For individual servings, use smaller baking dishes.
