  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the peanut butter, eggs, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Stir in the rolled oats and chopped nuts (if using) until evenly distributed.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with a fork.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use room temperature ingredients for easier mixing and a smoother dough. For chewy cookies, remove them from the oven when the edges are just golden. Customize your cookies by adding chocolate chips, raisins, or dried cranberries.
