- Wash and dry the strawberries, then remove the stems and slice them into quarters. Wash the cucumber and slice it thinly using a sharp knife or mandoline. If using red onion, slice it very thinly to add a subtle crunch without overpowering the salad.
- In a small bowl, whisk together the olive oil, fresh lemon juice, honey, and Dijon mustard until well combined. Season with salt and black pepper to taste. The dressing should be slightly sweet with a tangy kick from the lemon.
- In a large mixing bowl, combine the sliced strawberries, cucumber, and red onion (if using). Gently toss to mix. Add the chopped mint and basil, then sprinkle the crumbled feta cheese over the top.
- Drizzle the honey lemon dressing over the salad and toss gently to coat all ingredients. Serve immediately for the freshest taste, or refrigerate for up to 2 hours before serving to allow flavors to meld.
Notes
Choose ripe strawberries for best flavor. Prepare just before serving for maximum crunch. Can add grilled chicken or shrimp to make it a complete meal. Keep dressing separate if making ahead to maintain crisp texture.
